Bawa Bhonu: A Feast Fit for the New Year

If there’s one thing that unites us all, it’s the undeniable allure of good food. And when it comes to Parsi cuisine, resistance is futile. So, when I heard about ‘BAWA BHONU: A Parsi Feast’ curated by Chef Daugdo Farokh Ragina at The Courtyard By Marriott Mumbai International Airport, my taste buds went into overdrive.


This limited-time Parsi pop-up, running from August 8, 2024 to August 18, 2024, is nothing short of a gastronomic pilgrimage. Held at the MoMo Cafe, it offers an edible history lesson, with each dish telling tales of tradition, family, and secret masalas. And trust me, Chef Ragina, carrying on the flavourful legacy of her grandfather, the late Rustomji Bharda, didn’t just meet expectations— she absolutely outdid herself.


Now, let’s talk about the menu, which is as dynamic as a Bollywood plot twist. I’m talking Sali Marghi with crispy potato straws, and Paneer Chutney Cheeseballs that would make any vegetarian swoon. For the more herbivorous, the Bhindo Papeta is a glorious ode to the humble ladyfinger, paired with crisp potatoes in a way that could make a carnivore reconsider their life choices. And oh, the Patra Ni Machi—a flaky fish lovingly wrapped in banana leaves—is the kind of dish that makes you close your eyes and sigh after every bite.


Now, let's dive into my personal spread. I was treated to Gobhi Matar, a simple yet mouthwatering pairing of cauliflower and peas; White Kabuli Chana made me see chickpeas in a whole new light; and Soya Chaap, a starter so good it should come with a warning label. All of this was perfectly paired with a selection of breads and steamed rice, making for a wholesome, soul-satisfying meal.

But wait, there's more! Dessert, my friends, was where the magic truly happened. The rose jelly was a delicate, fragrant delight, but the Lagan nu Custard stole the show—sweet, creamy, and the kind of indulgence that should be followed by a satisfied nap.

Chef Ragina was on hand to regale me with stories, and one secret she let slip was about her homemade masalas—a closely guarded family recipe that gives her dishes that authentic, can't-get-it-anywhere-else flavour. And after tasting it, I am convinced it is more valuable than gold.

So, if you miss this Parsi pop-up, well, you missed out. Here’s hoping Chef Ragina returns with more of her culinary wonders, because once you’ve been to Bawa Bhonu, you’ll be counting down the days till the next Parsi New Year.
